    • BUTTER muffin pan
    • COMBINE: flour, sugars, baking powder, cinnamon, and nutmeg

    • COMBINE the two mixtures and mix well
    • SPOON into each muffin cup, 2/3 full (maybe a smidge more)

Mix the eggs, shortening and brown sugar and add to the oatmeal mixture. In a medium sized bowl, combine flour, baking powder, soda and salt, then add to the oatmeal/buttermilk mixture. Hold mixing to a minimum, mix only until flour are wet. I added one cup of (drained and patted dry) freeze dried blueberries that I soaked in hot, unsweetened chai. The oats I used were "cinnamon roll" flavored.
