Best served warm, these Cinnamon Raisin Oat Bars are an amazing treat for dessert or even just a snack. I made these for the first time over Christmas. Fifteen years ago I would have mistakenly skipped over them at the potluck table. Since I have always had a sweet tooth - I typically choose the sweet, rich, chocolatey dessert.

Steps to make Raisin oat bars:
  1. Either use a glass baking dish and melt butter in the microwave and turn the turntable off. About 15 seconds. Or use a microwave safe bowl and add butter, microwave 15 seconds.
  2. Add the marshmellows and stir till coated with the butter. Microwave about 20 seconds maybe less. When fluffy take out and stir.
  3. Then hurry up and add the oats. Coat it with the marshmellows and add the raisens, nuts, honey and mix very well.
  4. When done, either coat a cookie sheet with non stick spray or oil. Parchment paper will work. I had none. Then drop the mixer onto the pan and freeze or refrigerate till set a little better. So when you take it out you can flatten and shape it. Take something flat like a metal spatula and coat it with some nonstick spray and flatten the mixture and cut and shape into small rectangles. Refrigerate or freeze them even longer, Then you can wrap them individually with plastic wrap and store them in the fridge. They are sooo good.

However, I make an exception for these. The bars are wonderfully thick, crumbly, and have a delightful raisin filling. Combine flour, oats, baking soda, salt and cinnamon in medium bowl; set aside. Beat I Can't Believe It's Not Butter!® Spread with sugars in large bowl with electric mixer on low speed until creamy. Beat in eggs and vanilla until blended.
