  5. Heat frying pan to med low with a tad bit of oil
  6. Poor eggs in pan let it cook on one side til almost all on top is cooked
  7. Flip over and while its cooking on other side add all other ingredients on one side and flip other side folding in half
  8. Cook on both sides til golden brown and cheeses are melted..
  9. Put what you want on top …extra cheese. Hot sauce…sour cream. .salsa …chives. .etc

If you use more or less, sometimes it's hard to keep that perfect shape and your omelette will look more like scrambled eggs. I typically add water instead of milk. In a medium bowl, beat eggs until no whites remain, then season with salt, pepper, and a pinch red pepper flakes. In a medium non-stick skillet over medium heat, melt butter. Sprinkle half the omelette with some of the cheese, top with mushrooms, sprinkle with thyme and parsley, top with remaining cheese.
