Wraps feel more substantial than a salad, lighter than a sandwich, but just as fulfilling! For the chicken, you can use rotisserie chicken, leftover chicken, fresh grilled chicken or any type of cooked chicken you have on hand. Grill on a pan for a few minutes per side to crisp up the tortilla and melt the cheese. Return the chicken to the pan with the spices, tomato purée, chilli and lemon juice.

Instructions to make Chicken Wraps:
  1. Cut the chicken breasts in about 1.5cm strips, length wise.
  2. Get a breading station ready with 3 flat dishes. 1st Dish: Put the flour in. 2nd Dish: Mix the ingredients for the egg wash together and put in the 2nd one. 3rd Dish: Mix the ingredients for the breadcrumbs mixture together put in the last dish.
  3. Coat the chicken strips with flour, shaking off excess. Next, dip them in the egg mixture. Then coat them in the breadcrumb mixture. Place on a plate. It's best to do this in a few batches.
  4. Preheat your deep fryer to 170°C. If you don't have one just use a pot on the stove with oil in. Deep fry the chicken for 4 minutes. Transfer onto a paper towel to drain and cool.

Preheat a grill pan or an outdoor grill to medium-high heat. Remove the chicken from the oil mixture and pat. Heat the vegetable oil and butter in a large skillet over medium-high heat.
