Remove the chops from the oven, then set the oven to broil. Reduce heat to medium-low; pour honey mixture over pork chops. Combine all the ingredients for the marinade in a bowl. Then, brush the marinade over the pork chops, making sure to cover them completely.

  3. Next heat the pan and add sunflower oil,then place the pork chops. Cook them for 3 minutes each side.
  4. Remove the chops from the pan, add butter to the same pan, let it melt and add thyme, and the sauce made at stage 2. Whisk everything and immediately add back the pork chops.
  5. Use a tablespoon to pour some of the sauce on top of the chops. Repeat the process for 5 minutes and set aside to serve.

Return pork chops and juices to the skillet. Mix the wholegrain mustard with the runny honey. Slice the back fat on the chops in three places to stop them curling, then slather liberally with the honey mustard. Place then in a medium hot. Dry the pork chops with a paper towel and season each side liberally with salt and pepper.
