  2. Let it thicken a bit. Strain and keep aside any extra liquid.
  3. Take the pan off heat and top the strawberries with the granola. Sprinkle with the chocolate chips
  4. Beat the eggs and vanilla together. One way to add more sweetness to the recipe would be to add a bit of sugar to the egg. I did not do it though.
  5. Pour the eggs over the granola and pop it into the oven. Bake for 15 minutes or until the eggs are cooked all the way through.
  6. Cut yourself a nice big slice and eat!

Keep an eye on your frittata while it's cooking. Cooking times can vary widely depending on how many add-ins you've got, how hot they are going into the oven, and what kind of skillet you're using. In a medium bowl whisk together eggs, heavy cream, and mozzarella. Season with salt, pepper, and a pinch red pepper flakes. Serve cold, bring to room temperature, or reheat before serving.
