Get the recipe from Food & Wine. In a large bowl, combine the tomato, cucumber, red onion, kidney beans, tofu and basil. Just before serving, toss with salad dressing then season with salt and pepper. Note: This is great with a simple balsamic vinaigrette.

Steps to make Tofu and Tomato salad:
  1. Coat the tofu with salt.
  2. Wrap the tofu with paper towel, press it under weight to drain. I use a stoneware bowl. Sit in fridge half day/overnight.
  3. Slice the tofu and a tomato in bite size pieces. Arrange them on a platter in an alternating pattern.
  4. Scatter chopped coriander leaves over the tofu and tomato. Sprinkle with several grinds of pepper, drizzle sesame oil over them. Serve immediately.

Put the tofu and seasoning ingredients in a food processor and blend until you get a cheese spread texture. With the hand blender, blend a jet of olive oil with a handful of basil leaves. Slice the tomatoes, season with a pinch of salt, and serve a mountain of fake "cheese" on top of each. In a large bowl, combine the tomato, cucumber, red onion, kidney beans, tofu and basil. Just before serving, toss with salad dressing, and season with salt and pepper.
