Steps to make Whole Lentil Soup with Spaghetti:
- Chop 1 onion into small pieces and slice another onion into thin pieces.
- Heat a saucepan with olive oil and saute chopped onion for a minute.
- Add chopped garlic and saute for few seconds.
- Add turmeric powder and mix.
- Next add soaked red whole lentil, boiled chick peas and chopped green chilli. Give a good mix.
- Pour hot vegetable stock or water.
- Add salt and simmer for about 1/2 an hour to cook lentils completely.
- In the meantime heat butter in a pan and start frying thinly sliced onion.
- Fry till onions become golden brown and crisp.
- Transfer the crisp onion in a paper towel.
- In the same pan toast some bread slices with the leftover onion flavoured butter.
- Keep aside.
- When lentils cooks completely slide the spaghetti in the hot soup.
- When the spaghetti becomes soft add the chopped herbs. Cook for another 5 minutes.
- Before removing sprinkle 1/2 teaspoon black pepper, check the seasoning. Add salt if necessary.
- Transfer the soup into serving bowls, top with some sour cream and brown onion. Serve with toasted bread slices.
