Heat a non-stick pan over a medium heat with a drizzle of olive oil. Transfer the mince to a plate and return the pan to a medium heat.   8. Add cheese to top of peopers and broil on top rack until cheese has melted…about 5min
  9. Let cool before serving. Add cheese or seasoning to taste.

Top with more cheese and bake. Green bell peppers are filled with ground beef, cooked rice, tomato sauce, and seasonings, then baked for an hour with additional tomato sauce and Italian-style seasoning. Lots of combinations can be used, any leftover rice and meat plus cheese to taste :) Can be a side or entree, great with soup and easy to travel to work for lunch.
