My recipe today comes from my dear friend Becky who is currently living in beautiful Naples, Italy. Bruschetta is easily my all-time favorite appetizer!! Fresh juicy tomatoes, basil, and seasonings are piled high on garlic'd bread! Once you learn how to make bruschetta and it will become an easy go-to for using up summer tomatoes for years to come.
Steps to make Alex's Bruschetta:
- Set oven to 350°F.
- Cut French bread in slices and brush 1 tablespoon of oil on both sides of bread.
- In a small bowl.
- Combine minced garlic, other tablespoon of olive oil, basil, and Italian seasoning.
- Mix together the 2 cheeses.
- Add together the tomatoes with the seasoned mixture and combine the cheese mixture.
- Put slices on a baking sheet.
- Top bread with seasoned cheese mixture.
- Bake until cheese has melted.
Rubbing the garlic directly on the bread may make it strong – but it IS the authentic method – it's how they did it while I was in Italy. One good suggestion is to drizzle olive oil over the top of the tomatoes. FRESH basil is NECESSARY for this.
