I don't mind using some frozen and canned vegetables, but I don't like frozen or canned carrots at all, so those have to be fresh. I use canned green beans, corn, fire roasted diced tomatoes tomatoes, Rotel tomatoes, fresh baby.

Instructions to make Vegetable soup:
  1. Wash ur meat and put in a pot and add water,salt,Maggie,pepper,ginger and garlic and leave to boil…once meat is boiled take off fire
  2. While the meat is boiling… Wash ur water leaf and slice and keep aside, wash ur dry fish and keep aside,pound ur crayfish and keep aside then wash And slice ur ugwu and keep aside too..
  3. Once meat is soft..take off fire..add d sliced water leaf to the pot..do not add water as water leaf has water hence d name…watch as d water comes out den add ur meat and d small meat stock,d dry fish and kanda den Allow to boil for 2mins den add ur pepper,Maggie,salt and onions…add ginger and garlic and allow to boil… Then add ugwu and check for taste…if taste is good leave for 2mins and den take off fire
  4. Serve warm with any swallow of ur choice.
