When I make it I make an enormous pot, so I can freeze some. I don't mind using some frozen and canned vegetables, but I don't like frozen or canned carrots at all, so those have to be fresh. I use canned green beans, corn, fire roasted diced tomatoes tomatoes, Rotel tomatoes, fresh baby. In a stockpot, heat oil over medium-high heat; saute carrots, onions, celery and green pepper until crisp-tender.
