It doesn't take a rocket scientist to figure out that this isn't enough time to bake bone-in thighs unless they're really small. Four ingredients is all you need to make this seriously tasty dinner: Bone-in skin-on chicken thighs, rice vinegar, maple syrup, and dijon mustard. Season chicken thighs with salt and pepper. Add chicken, skin-side down, and sear both sides until golden brown. (The skin side will take much longer, in order to properly render the fat and crisp up the skin.) Season the chicken all over with salt and pepper.
