To roast the squash, I cut it on half lengthwise, remove the seeds and cook it cut down for about one hour. Cut butternut squash in half, then slice into ½" thick half moons. Wrap a piece of bacon around each piece of squash and place on a large baking sheet, seam side down. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally.
